Smoothies are probably one of my girls favorite after school snacks. I love it because I can make all three of their snacks all at once, instead of dirtying a bunch of dishes. I also love that there is usually some left over for mama to have a snack too!

Summer weather has reached our hometown of Las Vegas and I find myself trying to get creative with sweet and healthy ways to satisfy my sweet tooth. This freeze definitely brings me back to times when I walked around crowded and super hot theme parks as a teenager, and the only thing that sounded good was a nice cold and tart lemonade freeze! I see this treat being made over and over all summer long!

Banana Hot Cocoa

DSC00328

My favorite drink on a cool night is hot cocoa. The other day I had the idea of blending a banana with cocoa powder, milk and cinnamon, and warming it up in a pot. I call it, banana hot cocoa! It came out delicious. I love how the banana adds sweetness naturally to this hot cocoa drink. No extra sugar is needed. It also thickens it up, making it nice and creamy. Serve this drink hot right from the pot, and enjoy with marshmallows on top.

Normally I like to make my smoothies with almond milk, but I recently discovered pistachio milk and thought it would taste great as a base for a pistachio banana smoothie. This green smoothie is simple and delicious, as it only needs a few ingredients to make: pistachio milk, spinach, banana, honey and yogurt. You can even add pistachio nuts for a crunchy texture, or add then on top! Go ahead and try your new favorite green smoothie.

Convenience, satiety and flavor are often tough to find when you’re rushing around for breakfast in the morning. That is why I will never give up on trying to create all the make-ahead breakfasts. Chia seeds are known for their high fiber properties which is something often overlooked when considering high nutrient foods. However, some people do feel bloating when eating chia seeds. When mixed with water, chia seeds expand. So, eating chia seed pudding can make us feel the opposite of how we would like when eating a healthy breakfast. Cue the blended part of this meal. By blending the chia seeds, they are already broken down so it helps your stomach and takes the hard work out of the digestion process. And could it get any easier? Blend, refrigerate and enjoy the next morning with the toppings of your choosing. Hint: always add a little crunch. Crunch is the ultimate satisfier!

Blended Chia Seed Pudding Recipe

Ingredients

  • 3 tbsp chia seeds
  • 1 tbsp flaxseed meal
  • 1/2 cup almond milk
  • ½ ripe banana
  • 1/4 tsp pure maple syrup

Instructions

  1. Put all ingredients into the Magic Bullet cup and blend for 1-2 minutes, or until all chia seeds are ground down into a thick pudding-like texture.
  2. Transfer to a bowl and serve with optional toppings. I added the rest of the banana and some grain-free granola for crunch.
  3. Enjoy!

Brazilian Lemonade

DSC03541

It is a great mystery why this special Brazilian drink is called Brazilian “lemonade” when it is actually made with limes. Maybe somewhere along the way people decided limes taste better in the recipe than lemons, and didn’t bother to change the name. This “lemonade” is made with fresh lime juice and zest, with condensed milk to make it creamy. It is a special treat all year round!

This mango apple banana smoothie is one of my favorite breakfast smoothies. It is so simple, with only 4 ingredients: mango, apple, banana and water. No extra sweetener is needed, since all three fruits have plenty of natural sugar. The water gets things moving, while the frozen mango chunks and banana adds a nice, thick and creamy consistency.

Grapefruit Slushy

Grapefruit-Slushy-1

There’s something about a tart grapefruit that puckers your taste buds in just the right way. This grapefruit slushy is not too tart, not too sweet, and just the right amount of satisfying.

Grapefruit-Slushy-2

  • 1/2 grapefruit
  • 4-6 ice cubes
  • 1-2 tsp. sweetener (agave, syrup or sugar)
