Digestion. Eating seasonally. Anti-inflammatory. These are the buzz words that have gained traction in 2017 and will only get bigger in 2018. Why are we so concerned, or even obsessed, with these things? Because everyone wants to feel good and that is highly dependent on how you start your day. “I feel great, have so much energy and feel satisfied after breakfast!” said no one who ever dove into a bowl of sugar-laden cereal. Our digestive system works incredibly hard, day in and day out, that we do need to be mindful of giving it a break sometimes. After fasting overnight for 10-12 hours, morning is the ideal time to do this. You may feel bloated after a morning smoothie sometimes if it is TOO full of fiber and greens, or if its cold. Your stomach has to work harder to warm it up to digest it. When eating a warm smoothie, half the work is already done. Make sense? Good…now try this.

Warm Ginger-Pear Smoothie

Ingredients

  • 1 cup steamed cauliflower
  • 1 cup chopped pear
  • 1/2-3/4 cup almond milk
  • 1 cup vanilla protein powder
  • 1 tbsp flaxseed meal
  • 1 tsp chia seeds
  • 1/2 tsp ginger
  • 1/2 tsp cinnamon

Instructions

  1. Add all ingredients to the Magic Bullet. Blend until well combined.
  2. Serve in bowl with toppings of choice!

Hash Brown Casserole

Whenever we have guests staying overnight, I like to prepare this hash brown casserole for breakfast in the morning. It is filling, and it feeds a lot of people. This recipe is the basic version, but you can also add meats such as bacon or sausage, and vegetables. It is very easy to prepare and doesn’t require much time, so you can wake up in the morning and easily throw it together.

Hash Brown Casserole Recipe

Ingredients

  • 6 eggs
  • 1/2 cup milk
  • 1 package frozen hash browns
  • 1/2 cup shredded cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp paprika

Instructions

  1. Preheat oven to 350 degrees F.
  2. Pour the frozen hash browns into a 9×13-inch casserole baking dish.
  3. Add the eggs, milk, cheese and spices to a Magic Bullet cup and blend.
  4. Pour the egg mixture over the hash browns and add more cheese on top.
  5. Bake for 30 minutes, until brown on top.

Makes 1 9×13-inch casserole

Pumpkin Waffles

Ingredients

  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 3/4 cup milk
  • 1 tbsp maple syrup
  • 1/4 cup canned pumpkin
  • 1/4 tsp apple pie spice

Instructions

  1. Preheat a waffle maker.
  2. Blend all ingredients in a Magic Bullet blender.
  3. Pour 1/2 cup batter onto the waffle maker and close and cook until ready.

Makes 3-4 waffles

Coconut Banana Pancakes

In addition to all-purpose flour, coconut flour is blended with fresh banana, eggs and milk to create a pancake flavor you won’t be able to get enough of. They are a great way to use up bananas going bad. I like to serve these coconut banana pancakes with fresh fruit and honey.

Ingredients

  • 1 banana
  • 2 eggs
  • 1 tsp baking powder
  • 3/4 cup coconut flour
  • 1/4 cup all-purpose flour
  • 3/4 cup milk
  • Pinch of salt

Instructions

  1. Add all ingredients to a Magic Bullet pitcher and blend until smooth.
  2. Heat a skillet over medium heat and pour 3-inch circles onto the pan.
  3. Cook each side for about 2 minutes.

Blueberry Pancakes

Pancakes are everyone’s favorite Sunday breakfast. I love to add fresh fruit, chocolate chips, and even granola into my batter for a fun twist. This time, I used fresh blueberries and blended them right into the batter! For an extra special treat, you could add white chocolate chips right into the batter.

Blueberry Pancake Recipe

Ingredients

  • ½ cup fresh blueberries
  • 1 large egg
  • 1 cup whole grain pancake mix
  • 1/3 cup milk
  • 1 tsp. vanilla

Instructions

  1. In your Magic Bullet blender, add your blueberries and egg. Blend until completely blended. Add to a bowl along with the rest of your ingredients.
  2. Heat and grease a pancake griddle.
  3. Using a ¼ c. measuring cup, pour batter onto griddle. Bake evenly on both sides until golden brown.
  4. Serve with butter, warm maple syrup, and fresh blueberries.

Having 3 kids under the age of 6 can make mornings really crazy, which is why I am loving overnight breakfast! It makes things so much easier to have something to grab and go! This dish is perfect because it’s loaded with energy, which is all something tired mamas are lacking in the morning. Not only that, it’s also packed with protein and fiber! Do yourself a favor and get some chia seeds ASAP and make this dish!

Overnight Strawberry Chia Seed Pudding Recipe

Ingredients

  • 4 large strawberries
  • 1 cup vanilla greek yogurt
  • ¼ tsp. almond extract
  • ¾ cup chia seeds
  • ½ cup milk of choice

Instructions

  1. In the Magic Bullet Blender, add the strawberries, yogurt, milk, and almond extract.
  2. Pour into a bowl and fold in chia seeds.
  3. Add pudding to 2-4 mini bowls. Cover and store overnight.
  4. Enjoy first thing in the morning. If the pudding is too thick, you can stir in a little more milk to thin it.

Whenever I make mashed potatoes for my family, I always make an extra serving because I know I can stretch another dinner out of it! Mashed potato pancakes are so easy and versatile, you’ll be adding them to your dinner menu every week.

Mashed Potato Pancake Recipe

Ingredients

  • 2 c. mashed potatoes
  • 1/3 c. flour
  • 1 egg
  • Salt and pepper to taste
  • 2 tsps. Dried Italian herbs
  • (Optional toppings: sour cream, chives, green onions, etc.)

  1. Add all ingredients to the Magic Bullet blender, besides toppings, and blend until creamy.
  2. Preheat a pancake griddle and spray with non stick cooking spray.
  3. Scoop about ¼ c. of batter onto griddle.
  4. Let pancake cook a few minutes on each side. Before flipping, make sure the middle has started to cook. The pancakes can be very fragile, so make sure to cook them slow and on medium heat.
  5. Top with toppings you would use for a baked potato, eat and enjoy!

Did you know the secret to getting fluffy eggs is to whip them in a blender? It’s one of my favorite ways to make scrambled eggs! This time, I took it a step further and added the eggs into a skillet to make a yummy frittata. It’s the perfect breakfast to share with a busy mama and hungry kids, or to split with a loved one. Don’t forget to enjoy with a glass of fresh orange juice.

This recipe is also great because it’s entirely customizable to your liking! Add grilled onion, top with avocado, or throw in a few chopped chiles for a little extra spice. Super easy and super scrumptious!

Tomato Basil Skillet Eggs for 2

Ingredients

  • 1 cup cherry tomatoes
  • 1 Tbsp chopped garlic
  • 1 Tbsp olive oil
  • Sprinkle of pepper
  • ¼ tsp. salt
  • 4 eggs
  • 2 Tbsp milk
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 2 Tbsp chopped basil

Instructions

  1. Preheat the oven to 425 degrees F. Add the tomatoes, garlic, and olive oil to a baking dish. Toss, then sprinkle with salt and pepper.
  2. Place in the oven and roast for 10 minutes, or until the tomatoes become deflated and have a little more color on top.
  3. Meanwhile add your eggs, milk, salt, and pepper to the Magic Bullet. Blend for 30 seconds.
  4. Once the tomatoes are done, lower the oven temp to 350 degrees. Let the tomatoes cool a tad.
  5. Spray a small skillet with baking spray. Add the eggs, the tomatoes on top, and sprinkle with the basil.
  6. Put the skillet in the oven and bake for 10-15 minutes, or until the eggs are cooked through. Be careful not to overcook.
  7. Enjoy!
