The other day I got into a debate with my friend on what is better: smoothies or smoothie bowls. I think smoothie bowls win, hands down. They are just so much more versatile in terms of toppings and it is way more fun eating it with a spoon when thickened with frozen banana. The texture becomes almost like ice cream! In this smoothie bowl, I add frozen banana to frozen raspberries and coconut milk for a dairy-free alternative to milk or yogurt. You can top it with whatever you like, but fresh banana slices and oats are my favorite.

Raspberry Banana Smoothie Bowl

  • 1 banana, chopped and frozen
  • 1 cup frozen raspberries
  • 1/4 cup coconut milk
  • Oats for topping

  1. Add all ingredients except for toppings to a Magic Bullet cup and pulse a few times until thick and creamy.
  2. Top with fresh fruit, oats, seeds or whatever you desire.

Convenience, satiety and flavor are often tough to find when you’re rushing around for breakfast in the morning. That is why I will never give up on trying to create all the make-ahead breakfasts. Chia seeds are known for their high fiber properties which is something often overlooked when considering high nutrient foods. However, some people do feel bloating when eating chia seeds. When mixed with water, chia seeds expand. So, eating chia seed pudding can make us feel the opposite of how we would like when eating a healthy breakfast. Cue the blended part of this meal. By blending the chia seeds, they are already broken down so it helps your stomach and takes the hard work out of the digestion process. And could it get any easier? Blend, refrigerate and enjoy the next morning with the toppings of your choosing. Hint: always add a little crunch. Crunch is the ultimate satisfier!

Blended Chia Seed Pudding Recipe

  • 3 tbsp chia seeds
  • 1 tbsp flaxseed meal
  • 1/2 cup almond milk
  • ½ ripe banana
  • 1/4 tsp pure maple syrup

  1. Put all ingredients into the Magic Bullet cup and blend for 1-2 minutes, or until all chia seeds are ground down into a thick pudding-like texture.
  2. Transfer to a bowl and serve with optional toppings. I added the rest of the banana and some grain-free granola for crunch.
  3. Enjoy!

Dare I say this, but I don’t think I will ever make French toast any other way, than this way. I know it’s crazy, but this dish was SO good, my whole family went nuts for it! We are big banana bread people in my house, and I usually bake a batch every week. I get excited when my bananas start to brown because that can only mean one thing!

But  a loaf of banana bread can take almost an hour to bake up, and then you have to let it cool before you cut it. IT’S SO HARD TO NOT DIG IN!

This French toast plays off those same flavors, but whips up in under 15 minutes. it’s also best served hot, with melted butter, peanut butter, syrup, chocolate chips… need I go on?

Banana Bread French Toast

  • 1 ripe banana
  • 2 eggs
  • 1tsp. vanilla
  • 1 tsp. cinnamon
  • 1/4 c. milk of choice
  • 6-8 pieces of bread

  1. Preheat and grease a pancake griddle on medium-low heat .In the Magic Bullet blender, add all the ingredients, except the bread.
  2. Pour the mixture into a shallow bowl.
  3. Soak each piece of bread in the mixture and place on the griddle. Watch carefully as each side begins to brown, about 1-3 minutes on each side. The mixture can burn easily, so be careful.
  4. Flip and do the other side of the bread.
  5. Serve with your favorite toppings!

Green Smoothie Cubes

I wish I would have discovered the secret to super fast, healthy smoothie prep years ago! Recently, I discovered the technique of freezing my smoothies in ice cube trays in the freezer. When you are ready to make a quick smoothie, all you have to do is pop some cubes out into a Magic Bullet cup and add some water. No more chopping, measuring, or cleaning, and you have your smoothie ready in seconds.

Here is a recipe for one of my favorite green smoothies, and it is freezer-friendly 🙂

  • 1/2 cup plain yogurt
  • 1 tbsp honey
  • 1/4 cup water

Digestion. Eating seasonally. Anti-inflammatory. These are the buzz words that have gained traction in 2017 and will only get bigger in 2018. Why are we so concerned, or even obsessed, with these things? Because everyone wants to feel good and that is highly dependent on how you start your day. “I feel great, have so much energy and feel satisfied after breakfast!” said no one who ever dove into a bowl of sugar-laden cereal. Our digestive system works incredibly hard, day in and day out, that we do need to be mindful of giving it a break sometimes. After fasting overnight for 10-12 hours, morning is the ideal time to do this. You may feel bloated after a morning smoothie sometimes if it is TOO full of fiber and greens, or if its cold. Your stomach has to work harder to warm it up to digest it. When eating a warm smoothie, half the work is already done. Make sense? Good…now try this.

Warm Ginger-Pear Smoothie

  • 1 cup chopped pear
  • 1/2-3/4 cup almond milk

  • 1 tsp chia seeds
  • 1/2 tsp ginger
  • 1/2 tsp cinnamon

  1. Add all ingredients to the Magic Bullet. Blend until well combined.
  2. Serve in bowl with toppings of choice!
