My youngest is one of the pickiest eaters, but I can always get her to eat donuts. She loves all sorts of flavors, so I have a lot of fun coming up with new and healthier ways to get her to eat! These donuts come together so quickly which is always a plus!

Chocolate Peanut Butter Blender Donuts

Ingredients

  • ½ cup chunky peanut butter
  • 1 ripe banana
  • 1 egg
  • 1 tsp. vanilla
  • 2 tb. maple syrup
  • 1 tb. cocoa Powder
  • 1 tb. almond milk
  • ½ tsp. baking powder

Instructions

  1. Preheat oven to 350 degrees. Add all of the ingredients to the Magic Bullet blender and blend until creamy, about 1 minute. 
  2. Grease a donut pan and then pour the batter into the donut pan. Top with chocolate chips, optional. Bake for 10-12 minutes.

This is a great ‘sunrise’ smoothie that you can enjoy after your morning workout, or a little bright pick me up! Or, if you are in a really good mood…A nice big scoop of coconut milk ice cream would make a rather nice addition ;).

Fresh OJ Creamsicle Smoothie

Ingredients

  • 1/2 cup fresh squeezed orange juice
  • 1/2 cup milk or coconut milk
  • 1/2 cup greek yogurt
  • 1 tsp. vanilla
  • 1 frozen banana

Instructions

  1. Add all of the ingredients into the Magic Bullet Blender and Blend until creamy. Drink immediately and enjoy!

Smoothie bowls are one of my favorite treats! It’s my own version of build your own ‘fro-yo’, because I can add whatever topping I would like to a creamier/healthier ice cream base. I usually always go with chocolate :). Feel free to adjust the flavors and toppings accordingly! One topping I used were cocoa nibs, which is an all natural form of pure cocoa, but I would definitely be ok with chocolate chips as well!

Chocolate Smoothie Bowl

Ingredients

  • 1/2 large frozen banana, sliced
  • 1/4 cup milk of choice
  • 1/4 cup ice
  • 1 tb. cocoa powder
  • 1 tsp. honey or 1 pitted date
  • 1/4 tsp. pure vanilla extract
  • Toppings for smoothie

Instructions

  1. In the larger blender of the Magic Bullet, add your smoothie ingredients. Blend until creamy. Add more milk if needed to blend easier.
  2. Pour into a bowl, add toppings, and eat immediately.

This nutty, spiced sweet potato bread pairs nicely with a warm cup of tea or coffee and whipped honey butter. It is best warm right from the oven after cooling about 15 minutes. You can place extra loaves in a freezer, wrapped in foil and placed into freezer bags and they will keep for a few months. When ready to consume, thaw overnight or bake in the oven for 15 minutes at 350 F. This recipe makes one large loaf, or 4 mini loaves.

Spiced Sweet Potato Bread

Ingredients

  • 1 boiled sweet potato, peeled and chopped
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/3 cup water
  • 1 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350 degrees F.
  2. Add the cooled sweet potato, eggs, oil and water to a Magic Bullet pitcher and blend.
  3. Add the flour, baking soda, cinnamon, nutmeg and salt to a large mixing bowl.
  4. Pour the sweet potato mixture over the dry ingredients and stir.
  5. Stir in the pecans.
  6. Pour into a greased 9×4 inch loaf pan and bake for 1 hour.

My girls love anything ‘pink’ so when I was making this chia pudding they kept asking for it to be ‘pink’. Thank goodness for red ripe strawberries, because this its their new favorite treat! Plus blending it smooths out the chia seeds so it’s not a weird texture for the kids!

Strawberry Chia Seed Blender Pudding

Ingredients

  • 3/4 cup unsweetened almond milk
  • 4 tb. chia seeds
  • 4 large strawberries
  • 4 pitted dates
  • 1 tb. pure maple syrup
  • 1/2 tsp. vanilla

Instructions

  1. In a Magic Bullet Blender add all of the ingredients and blend until creamy. Pour into a dessert glass and refrigerate until set, about an hour. Top with additional strawberries and chopped chocolate. Enjoy!

Bacon and Leek Quiche

It took me many years to perfect my favorite quiche recipe, always striving for the best texture and flavors. This is my go-to quiche recipe that turns out perfect every time. Quiche is always a nice addition to the breakfast table, but equally nice when paired with a salad for lunch or dinner. I think of baking a quiche in 3 steps: the crust (if you are making it at home), the egg filling, and the vegetables/meat/fish filling. The crust is prepared first, so later you just have to add everything in a finish baking. Next, I prepare the vegetables and/or meats/fish and lay them down on the bottom of the pie. Last, I whip up the eggs, cheese and cream in my Magic Bullet blender and pour over the top.

Bacon and Leek Quiche

Ingredients

  • 1 9×13-inch pie crust
  • 1 leek, thinly sliced
  • 4 strips turkey bacon
  • 4 eggs
  • 1 1/2 cups milk or cream
  • Pinch of sugar
  • 1/2 tsp salt
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 425 F.
  2. Cook the bacon in a skillet until crisp, then add the leek and 1 tbsp olive oil and cook until tender, about 7 minutes.
  3. Crumble the bacon and fill the bottom of the crust with the leek and bacon mixture.
  4. Add the eggs, milk, sugar, salt and cheese to a Magic Bullet pitcher and blend.
  5. Pour over the quiche filling.
  6. Bake the quiche in the oven for 15 minutes, then lower the heat to 300 F and bake for 30 more minutes.

Cheddar Waffles

Not all waffles need to be sweet. These cheddar waffles go great with chicken and gravy, or with a dollop of sour cream for a delicious savory side dish. You can experiment with other cheeses and herbs by adding them to this basic cheddar waffle recipe. Try adding fresh chives on top!

Cheddar Waffle Recipe

Ingredients

  • 1 1/2 cups flour
  • 1 1/2 cups milk
  • 1 cup shredded cheddar cheese
  • 2 tsp baking powder
  • 2 eggs
  • 1 tsp salt

Instructions

  1. Preheat a waffle maker.
  2. Add all ingredients to a Magic Bullet pitcher and blend.
  3. Pour the batter onto the waffle maker, close and cook until crisp.

Makes 4 waffles

I feel like every time my bananas turn brown, I create a new banana bread recipe with different variations. I wanted to try something different besides my typical chocolate chip banana bread. So, I browned some butter which gave the bread a hint of caramel flavor and then added one of my favorite spices. It’s almost like a little piece of the Fall Season in one recipe!

Spiced Brown Butter Banana Bread

Ingredients

  • 4 ripe bananas mashed
  • 1 cup coconut sugar
  • 1/2 cup greek yogurt
  • 1 stick salted butter
  • 2 eggs
  • 1/3 cup coconut milk
  • 1 3/4 cup flour, or whole wheat flour
  • 1 tb. garam masala spice
  • 1 tsp. baking soda

Instructions

  1. In a bowl, mash the bananas and add them to the large blender cup of the Magic Bullet Blender. Set aside.
  2. In a sauce pan add your butter and melt on medium low heat while continually stirring until the butter has reached a light to dark brown caramel color. Remove from heat to let cool.
  3. In the blender add the eggs, sugar, yogurt, and milk, with the bananas. Blend until creamy. In a separate bowl, whisk together the flour, spices, and baking soda. Fold in the banana mixture, and then stir in the browned butter.

I made 4 mini loaves, baked at 325 for 30-35 minutes. Adjust time accordingly if you are using large bread pan.

Simple Crepes

My husband has never loved pancakes because they can be so thick and cake like, so I started making crepes a while back to fit his taste buds! They are thin, light, but still so filling! And when a batter comes together all in one blender, you will not see me complaining! Easy peasy!

Simple Crepe Recipe

Ingredients

  • 1 cup milk
  • 1 tb. vanilla
  • 3 eggs
  • 1 c. flour
  • 2 TB. melted butter
  • 1 tsp. sugar

Instructions

  1. Add all the ingredients to the Magic Bullet Blender until blended.
  2. Grease and heat a pan on the stove.
  3. Once it’s ready pour a thin layer of batter to coat the bottom. Cook slowly one side, then carefully release the edges and flip. It’s ok if it isn’t perfect.
  4. Once it’s done, fill the crepe with desired fruit fillings, nut spreads, etc. And top with powdered sugar! Enjoy!

The other day I got into a debate with my friend on what is better: smoothies or smoothie bowls. I think smoothie bowls win, hands down. They are just so much more versatile in terms of toppings and it is way more fun eating it with a spoon when thickened with frozen banana. The texture becomes almost like ice cream! In this smoothie bowl, I add frozen banana to frozen raspberries and coconut milk for a dairy-free alternative to milk or yogurt. You can top it with whatever you like, but fresh banana slices and oats are my favorite.

Raspberry Banana Smoothie Bowl

Ingredients

  • 1 banana, chopped and frozen
  • 1 cup frozen raspberries
  • 1/4 cup coconut milk
  • Oats for topping

Instructions

  1. Add all ingredients except for toppings to a Magic Bullet cup and pulse a few times until thick and creamy.
  2. Top with fresh fruit, oats, seeds or whatever you desire.

Makes 1 bowl
