I’m back from a long weekend away. I’m SURE you must have missed me 😉

You know what I missed? My Magic Bullet!

 

This is the time of year of hearty roasted vegetables and savory delights! Autumn is by far my favorite season. It’s such a relief to have this crisp air rolling into the city, and everyone looks so cute in sweaters and scarves.

 

Anywho, obviously, with this colder weather rolling in, I’m going to be making a lot more soups with my little Bullet. Today I want to share with you a sweet potato soup so hearty and delicious, you won’t believe there’s no dairy!

 

And away we go!!!

 

Dreamy Vegan Roasted Sweet Potato Soup

 

Ingredients:

  • 3 tbs cold pressed extra virgin olive oil
  • 2 red onions
  • 4 lbs sweet potato
  • 8 cups vegetable broth
  • 1/2-1 cup raw macadamias, soaked for 4-6 hours
  • a few whole macadamias for garnish
  • chopped cilantro or coriander
  • 1-2 tsp celtic sea salt

 

1. Preheat oven to 375 degrees.

2. Peel the sweet potato and cut into big chunks, and quarter the red onions.

3. Toss the veggies in olive oil and sea salt.

4. Roast in the oven for about 45-60 minutes.

5. Bring the vegetable stock to boill Add roasted veggies and simmer for about 10 minutes.

6. Allow to cool slightly, then, using your tall Magic Bullet cup and Cross Blade, blend in batches with the macadamias.

7. Return to stove and simmer for another 2-3 minutes, adding cilantro/coriander to taste.

8. Garnish with a couple macadamia nuts and devour!

Guh!

It’s that time of year when the seasons are a’changin’.

Don’t get me wrong, I LOVE autumn, but every year around this time I get stuck with a case of the sniffles.

But this year, thanks to the Magic Bullet, I can chase away those germs before they find me….and today, I’m going to share an immune-boosting recipe so you can do the same! And in no time!

Ingredients:

  • 1 ripe banana
  • 1 cup blueberries, fresh or frozen
  • 2 – 3 kale leaves, with stalks
  • 1/2 cup broccoli
  • 1/4 Water

Optional: a handful of goji berries

Throw all this in your large Bullet cup with the cross blade, blend for about 10 seconds. Easy as pie!

Take two of these and call me in the morning!

Terrific Tuesday’s – back atcha.

Lauren here, your Kitchen Magician and recent vagabond. In 4 days I took to the east coast and travelled over 1,200 miles – without stepping foot in an airplane. Now I know many people claim ‘restless leg syndrome’ is perhaps a made up thing – but give me a big swan dive into the fountain of youth, a lap with the Loch Ness Monster, and coffee with Big Foot- I now beg to differ.

Regardless, one of my trips was to Baltimore to work at an exhibit booth for one of my dear family friends at the Natural Products Expo East.

Since my venture, I have decided  to try and take a healthier route and try my luck with some detox shakes (and no, this has nothing to do with the fact that I have to put on a bathing suit next week…….)

Yes, I wish it was a cup of pesto too.

I do strongly recommend that you try it out. Gives you a good energy, and don’t forget to crank some major H2O with it!

 

Magic Bullet Blender Parts:

(1) Magic Bullet party mug

(1) Magic Bullet cross blade

 

Ingredients:

  • 1/2 banana
  • 1 Cup, kale
  • 1/2 Cup, blueberries
  • 1/2 Cup, water
  • 1 Tablespoon, Ginger root

 

Recipe:

  1. Add all ingredients to your party mug and blend for 10 seconds.
  2. Drink, feel good, and enjoy!

 

Now the nice thing about this is that it is versatile. I personally like blueberries, plus their added antioxidants – but if strawberries are more your speed, then change it up and go for the gold kiddos.

 

On that note – I’ll be checking in a couple more times this week, and the chances of one or both recipes being cheese based are very good.

Hey everyone!

 

It’sssssssss FRIDAYYYYYYYYY!!!!! Yay!! Are you all stoked for the weekend?

 

I was unpacking one of my Magic Bullets today, because I wanted to start using the juicer attachment, and within about 3 seconds of pulling out the base and the tall and short cups, THIS LITTLE CRITTER hopped into the box! That’s Larkin, everyone. She’s just 1 of the 4 (!!!) cats we have here in our 4,200 square foot loft.

 

Anyway, as you know Friday generally means it’s time for COCKTAILS, but since I’m back to school, I’m eliminating a lot of alcohol from my diet. (I’m sure once midterms come around, I’ll be singing a different tune.)

 

So, since I’m using APPLES this week, I wanted to share with you a delicious CARAMEL APPLE SMOOTHIE! Perfect for a decadent weekend treat! It’s also an homage to Larkin, because she has that interesting caramel color

 

Here we go!

 

Ingredients:

  • 1 cup apple juice
  • 1 whole apple, peeled and chopped into small pieces
  • 1 cup low-fat vanilla yogurt
  • 1/4 cup caramel ice cream topping
  • 2 tbs smooth peanut butter

 

Directions:

Pour the apple juice into an ice cube tray and let this freeze for about 2 hours. When complete, remove the cubes and throw into your large Bullet cup. Add the remaining ingredients and blend for about 10 seconds….

 

Feel free to drizzle more caramel on the top!

 

Now take a load off! you deserve it after this week!

Thursday ….. oy is a toughie.

You are so close, yet so far.

The weekend itch is starting.

The AM shift at the coffee joint is getting testy.

Your kids may be approaching that ‘off the wall / I haven’t fed you candy today and don’t understand how you can be this hyper stage’.

You can FEEL that underlying excitement vibe all around… but you still have Friday to deal with.

On that note – let’s break it down.

A little background – I LIVE for embracing, entertaining and over feeding my loved ones.

And when time permits – and Thursday hits, the weekend planning is going full throttle.

This weekend I have volunteered to host my dear cousin and biggest Kitchen Magician Competition supporter, Danielle’s bachelorette party. Approximately nine lovely ladies in their mid-twenties will be shacking it up with me – and yes … it is time to get down.

Saturday is going to be a busy day around the city with many agenda items on the list – but once the late afternoon hits – we are hitting my roof deck, hitting the bullet, and taking a knee before my own little wolf pack heads out the town.

And what better way to unwind for a hot minute than diving face first into a CITRUS BERRY CHILLER

My favorite ingredient – limoncello. What I would do to bathe in limoncello.

For those of you who are unfamiliar with limoncello, it is an Italian liquor made with lemon, vodka, water and sugar, and then sits at room temperature – timing varies. Regardless, it is typically served chilled and is fabulous as an after dinner palate cleanser or sometimes used to spice up dessert recipes.

But for this weekend – and due to my fabulous cousin’s love for limoncello – we are using it to spice up our beverage.

Here we go –

*NOTE: For all beverage recipes, I will be including a ‘kid friendly’ variation as well. Yes, I love to go out and do event management for a living, but I was also an education major and certified to teach in the state of Massachusetts. The kiddos will never go by the way side J

CITRUS BERRY CHILLER

[1] serving

[1] Magic Bullet party mug

[1] Magic Bullet comfort lip ring

[1] Magic Bullet cross blade

[3/4 cup] frozen lemonade concentrate

[3/4 cup] unsweetened, frozen raspberries

[1/2 teaspoon] granulated sugar

[1/2 cup] chilled limoncello

*KID FRIENDLY: substitute limoncello with [1/2 cup] orange juice

–          Add all ingredients into the party mug

–          Blend for about 15 seconds

–          Screw on your comfort lip ring

–          Toss in a BIG FAT straw

–          E-N-J-O-Y

Hey Magic Bullet fans!

I’m here with your first recipe for the What’s Cookin’ Good Lookin’? recipe series! In the first few installments, I’m going to be focusing on a refreshing summertime ingredient: WATERMELON!

This enormous fruit, originally from southern Africa, is a great source of Vitamins A and C, as well as potassium. Most importantly, though, because it’s 96% water, it’s a great and tasty way to stay hydrated on those HOT summer days we’ve been having in Brooklyn.

Over the next week or so, I will introduce you to smoothies, soups, and cocktails you can make during this heat wave.

So here goes, our first recipe:

WATERMELON SMOOTHIE

Ingredients:

  • 1 cup seeded watermelon chunks
  • 1/2 cup of ice
  • 1/4 cup plain yogurt
  • 1/2 tbs sugar
  • pinch ground ginger
  • dash of almond extract

Throw all this into your Magic Bullet, throw on your cross blade, and in seconds, you’ll have a REFRESHING summer smoothie!

Now sit back, relax, and take in a sweet sip of summer!
