This recipe is natural, decadent and delicious. A strawberry daiquiri on its own is a force to be reckoned with: a fresh strawberry smoothie with alcohol? Yes please! Combine that with slightly whipped coconut cream, though, and you’re in a different league of tasty.

With the Magic Bullet’s help, we’re not only blending the daiquiri, we’re creating powdered sugar and whipping our own coconut cream.

Coconut Cream Strawberry Daiquiri
Ingredients
  • 1 1/2 cups fresh strawberries, sliced
  • 1 1/2 cups ice cubes
  • 2 Tbsp rum
  • 1 1/2 Tbsp Peach Vodka or Peach Schnapps
  • 1 1/2 Tbsp. Sugar + 1 1/2 Tbsp water (to make about 1 1/2 Tbsp. of our own simple syrup)

Ingredients for Whipped Coconut Cream

  • 1 can full-fat coconut milk, refrigerated
  • 1/4 tsp. vanilla
  • 1 Tbsp sugar, powdered* or 2 Tbsp sugar, blended to powder

* Most recipes call for powdered sugar. Instead of buying an entire package, we’re going to use the Magic Bullet to powder plain sugar for us.

Directions
  1. First step is to make your own simple syrup. If you already have some, you can skip down to step 2. In order to make simple syrup, just combine 1 1/2 Tbsp sugar with 1 1/2 Tbsp water, heat and stir until the sugar is dissolved into the water.
  2. Now, let’s make our own whipped cream. Blend 2 Tbsp sugar in the Magic Bullet to powder.
  3. Scoop thick layer of coconut cream from the top of the can into the Magic Bullet. Discard the coconut water or save for other uses, and blend for 30 seconds. Then add vanilla and 1 Tbsp powdered sugar and blend for about 2 minutes (we don’t want it too creamy, so that the cream can mix well with our daiquiri).
  4. Chop strawberries into small chunks.
  5. Combine strawberries, ice, simple syrup, rum and vodka (or schnapps if you have it) in Magic Bullet and blend.
  6. Pour the strawberry mixture into your serving cup and top with the whipped coconut cream.

Garnish with cinnamon if you’d like and enjoy the decadence of this wonderful drink – you deserve it!

Don’t waste money on expensive, sugary frozen drinks from big chain coffee shops. Instead, whip up your own using fresh, healthful ingredients in the Magic Bullet! This version gets a tropical twist, using a frozen banana in place of artificially sweetened mixes.

Customize it by adding your favorite frozen fruit, a little mint, or a sprinkle of cinnamon.

Pitaya Bowl

Being the mom of three very girly dramatic divas, I can attest that the color of food has a big play on whether they are willing to try certain foods or not. They even have an opinion on the color of the corresponding plate, spoon, bowl, cup, and everything else, for that matter. I love them so much, but, sometimes, it’s hard finding ways to make things appealing to those big, princess eyes of theirs.

Recently, all the rave has been over acai and pitaya bowls. If you aren’t familiar with them, it’s basically a rich, antioxidant fruit blended into a thick smoothie topped with granola, fruit, and honey. It’s highly addicting! Pitaya, also known as dragon fruit, can be bright pink in color, which, to the eye of a 3-year-old tiara wearer, is amazing! This recipe can be an easy-to-make smoothie or turned into a bowl topped with granola, honey, and bananas.

Grasshopper Smoothie

DSC03984

Happy St. Patrick’s Day!

In celebration of all things green today, I made this green grasshopper smoothie. Don’t worry, it doesn’t contain any real grasshoppers! It is inspired by grasshopper desserts, which usually contain mint and chocolate. This healthy smoothie is loaded with spinach, banana, almond milk, mint extract, and cacao nibs. It is really refreshing when cold, so I like to freeze my bananas beforehand and use a handful of frozen spinach straight from the freezer. Fresh mint leaves add a nice touch of decoration, and go perfectly when blended in this grasshopper smoothie for an extra minty taste.

Fruit Gazpacho

A traditional gazpacho is made with a tomato base that’s combined with other vegetables and served cold. It’s a refreshing dish that can satisfyingly lead a healthy meal.

This recipe, similar to a smoothie, turns it around and lends a fruity gazpacho ending to the meal, feeding our sweet tooth, while providing our bodies with tons of health benefits.

Strawberry Milkshake

strawberry-mlikshake4

If you are a busy mama like myself, then you know the dreaded hours that come after lunch and before dinner. Everyone is tired and hungry, and you become so tempted to turn on the babysitter TV and lock yourself in a closet with a bag of chocolate.

Just me?

Well, I always find that during that time, a little pick-me-up (healthy) treat can work wonders. Milkshakes are a family favorite, and it’s just the thing to get everybody in the right mood to last until dinner. (And until daddy comes home to save the day!)

This milkshake is sans ice cream, but your kiddos won’t notice the difference. The creaminess and thickness comes from frozen bananas, which also adds a nice sweetness! It’s definitely a family favorite treat!

Smoothie bowls are such a fun idea because by making your smoothie a little thicker, you can pour it into a bowl and add toppings for a refreshing breakfast or snack. To make it thicker, use less liquid, more frozen items and a thick yogurt, like Greek yogurt.

In this green smoothie bowl, the spinach and avocado give it a nice green color, while the frozen berries, banana and juice make it taste sweet and delicious. Make sure to use frozen fruit to give it a nice, thick consistency. I like to add fresh fruit, such as blackberries, oats, seeds and nuts as toppings. All of these healthy ingredients come together to make a true power breakfast in this power green smoothie bowl!
