Mango Carrot Smoothie

I used to hate carrot juice as a kid. Recently, I discovered this mango carrot smoothie, which doesn’t taste anything like carrot juice! It’s so good and good for you! I usually add yogurt or milk to my smoothies, but no dairy is needed for this one – just orange juice, water, banana, carrots, and frozen mango. This smoothie is packed with vitamin A and C, and will give you the nutritious energy you need to start your day.

Mango Carrot Smoothie

Ingredients

  • 1/2 cup frozen mango
  • 1 banana
  • 1/2 cup orange juice
  • 1/4 cup water
  • 1 carrot, peeled

Instructions

  1. Add all ingredients to Magic Bullet blender cup and pulse until well blended.

Makes 2 cups

Pumpkin Bumpkin Dessert Smoothie

  • 1/2 cup spinach
  • 1/4 cup organic, canned pumpkin puree (if fresh pumpkin is not available)
  • 1 tbsp. pecans
  • 1 dash of cinnamon
  • 2 dates
  • 1 cup unsweetened almond milk (or more, if you prefer)

Add all ingredients to your Magic Bullet cup and blend until smooth.

Apple Cider Smoothie

I feel like Bubba from Forrest Gump, but instead of shrimps, I gots me some apples! We went apple-picking last weekend and we are still buried in a mound of apples. Made some apple pie and apple sauce and now we are on to apple cider smoothies!

Pretty easy to make and just as good for you as eating two apples–without the chewing of course.

Apple Cider Smoothie

Ingredients

  • 2 large apples or four smaller apples. Wash and core! (You don’t have to peel them.)
  • 1/2 cup water
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Pour water into your Magic Bullet cup and add your cut up apples.
  2. Sprinkle the cinnamon over it and blend! It’ll be on the thicker side so you can add a little more water to reach your desired consistency.
  3. Put it in your favorite mug and enjoy a cool fall treat!

Mango Lassi Popsicles

Whenever I go get Indian food, I always treat myself to a Mango Lassi. And thanks to this Desserts for Breakfast recipe, I can have a Mango Lassi any time I want. That my friends, makes me real happy. Happy happy mango lassie.

Mango Lassi Popsicles

makes 6-12 popsicles depending on your molds

Ingredients

  • 2 cups ripe mango, chopped
  • 1 1/2 cups Greek yogurt
  • 1/2 cup milk
  • 2 Tbsp sugar
  • big pinch of ground cardamom
  • big pinch of salt

Instructions

  1. Peel your mango, chop it up into large chunks and put all your ingredients into the Magic Bullet. I had to do this in two parts so that it wouldn’t be too full.
  2. Blend! Once everything is well mixed, you can pour it into your popsicle molds.
  3. I improvised with small plastic cups and poured the mixture in and let it freeze for about an hour and then stuck my popsicle sticks in the middle. Let them freeze solid around 4 hours or overnight.
  4. Then, when you have a craving for something fruity and delicious and slightly exotic, run your popsicle mold under some warm water, pop it out and thank yourself for trying out this recipe!

I love smoothies. I drink them almost every day. Last weekend at the grocery store, I walked by some mint and impulsively bought it because it smelled so good, but I realized I had way too much of it once I got home. Instead of making my usual berry smoothie for lunch, I decided to experiment with mint and chocolate in a smoothie. Yes, the chocolate chips add on a few more calories, but in this smoothie, it’s worth it! It tastes like a mint chocolate chip milk shake! Just add a banana, ice, yogurt, milk, cocoa, chocolate chips and mint to a Magic Bullet cup and blend up this refreshing treat!

Mint Chocolate Chip Smoothie

Ingredients

  • 1 cup ice cubes
  • 1 banana
  • 1/4 cup fresh mint leaves
  • 2 tbsp cocoa powder
  • 1/4 cup milk
  • 1/3 cup non-fat plain yogurt
  • 2 tbsp semi-sweet chocolate chips

Instructions

  1. Add all ingredients to a Magic Bullet cup and pulse several times until blended.

Makes 2 smoothies

Fall is just around the corner and what better way to welcome this lovely season into our lives that with a fall classic: Apple Pie.

Delicious, warm, it really is the best. But baking can be time consuming and difficult, especially if you don’t have all the ingredients you need, all the utensils, or the time it takes to sit around and wait for it to bake. Chances are though, that you have a few common smoothie ingredients, some apples, and a few apple pie spices. Give it a blend in your Magic Bullet and get the season started with this tasty treat.

Apple Pie Smoothie

Ingredients

  • 1 pad butter or cooking spray
  • 1 cup chopped peeled apple (about 1 small apple)
  • 1 teaspoon brown sugar
  • 1 teaspoon cinnamon, divided
  • 1/2 cup nonfat vanilla yogurt
  • 1/2 cup vanilla almond milk (if you don’t have vanilla milk, use regular milk and add a bit of vanilla extract to the smoothie)
  • Pinch of nutmeg
  • Pinch of allspice

Instructions

  1. In a nonstick skillet over medium heat, heat the butter or cooking spray and cook the diced apple, brown sugar and cinnamon until they are lightly browned and soft, about 4-5 minutes, stirring often. Add  the mixture to your Magic Bullet once it’s cooled.
  2. Add vanilla yogurt, almond milk, nutmeg, allspice, and the remaining cinnamon to the Magic Bullet and blend until smooth!
  3. Enjoy chilled with a sprinkle of cinnamon for garnish.

Have you ever tried a strawberry mango smoothie? If not, it is a definite must!! The combination of these two delicious fruits creates an even more delicious flavor. I could go for one of these any time of day, whether it is for breakfast or as a pick-me-up after a long day at work. Mangoes and strawberries are packed with fiber and antioxidants, and smoothies are an easy (and delicious!!) way to get in those extra fruit servings during the day. I get my frozen mango cubes at my local grocery store (Trader Joes), but if you can’t find them at yours you can easily slice up a mango into cubes and store them in a freezer bag until you are ready to use them.

  • 1/2 cup frozen mango cubes
  • 1/2 cup frozen strawberries
  • 1/4 cup plain non-fat yogurt
  • 1/3 cup orange juice

Thin Mint Smoothie

Every now and then, my hoarding tendencies show up and one of those times is during Girl Scout cookie season. Usually, I pick up a box or two or four, but this year, I bought six boxes. And then my boyfriend bought six boxes. And then my sister bought six boxes and shipped them to me…

So now, I have 18 boxes of (mostly) Thin Mints. And I’ve eaten a lot, but I also stuck some in the freezer for the inevitable winter sans supplier.

The other day I had a craving for some Thin Mint goodness, but wanted to mix it up a little, so I adapted this recipe from Shutterbean for a Milk and Cookie Smoothie.

Thin Mint Cookie Smoothie

Makes about two smoothies

Ingredients

  • 1 cup whole milk
  • 1 cup ice cubes
  • 1 frozen banana, peeled & sliced
  • 1/2 cup cookies (I obvi used Thin Mints)
  • 1/4 cup peanut butter
  • 2 tablespoons agave

Instructions

Ready for the next step? It’s real easy.

  1. Throw all said ingredients into your Magic Bullet.
  2. Pulse until it’s reached your desired consistency.

I like mine thick and a little chunky, so I didn’t blend too long.

Pop a cookie on the top–as an extra treat–and enjoy!

The Ultimate Green Smoothie

Ingredients

  • 1 handful kale
  • 1/2 frozen banana
  • 1/2 grapefruit
  • 4-5 chunks pineapple
  • 1 1/2-2 cups almond milk

Instructions

  1. Blend in your Magic Bullet until smooth.

NYC is experiencing some ridiculous heat waves this summer. Normally, everyone would be happy that the sun is shining and it’s warm enough to wear shorts and take a walk, BUT these days are topping out at 99, 101, 103 degrees… which makes me just want to stay inside and take advantage of the air conditioning and ALL the fans I own.

And because I wanted a snack/dessert but couldn’t bear to walk to the fro-yo place so I used all the frozen fruit I had been hoarding away.

You’ll need:

  • Frozen fruit
    • I used mango, strawberries, blueberries, a banana and some milk
      • Obviously, MOO cow had to help, too

  1. Throw everything into your Magic Bullet and give it a whirl.
  2. Then have MOO cow (or other cutesy inanimate object) inspect it thoroughly.
  3. Then you can smugly sip your cool cool sMOOthie while the world outside your window melts.
