These mini ham and cheese frittatas make a great “prepare ahead of time” brunch item, but they are also very quick and easy to make if you want to have them fresh. Frittata is known to be a “clean out your fridge” dish, so next time you have some extra ham left over or some cheese you need to use up, this is the perfect way to use them! You can also switch out the ingredients or add new ones. Other ideas for these mini frittata include mushrooms, bell peppers, spinach, tomatoes, asparagus, bacon, or sausage.
