Thai Noodle Salad

It can be scary to step out of our comfort zones when it comes to cooking. For most of us, the foods and recipes we know are what we stick with in our every day cooking. Once I was experimenting a little and created this delicious Thai-inspired noodle salad. It has cucumbers, carrots, cilantro, and pineapple, all tossed in a peanut sauce. You can use rice noodles or Japanese yakisoba noodles in this recipe. Thai Noodle Recipe Ingredients 1 12-oz […]

Creamy Peanut Sauce

I’m kicking myself for not making this peanut sauce more often. It’s super simple to make and it’s incredibly delicious! I love to pair this with cooked chicken and veggies. Keep this on hand to jazz up on any dinner! Creamy Peanut Sauce Ingredients 1/2 cup peanut butter Juice of 1 lime 2 tb. soy sauce 1/3-1/2 cup coconut milk, canned 1 tb. brown sugar 2 cloves garlic Instructions Add all the ingredients into the Magic Bullet Blender and blend […]

Thai Chicken Pizza

This Thai chicken pizza is inspired by a crazy good pizza I had the other weekend up in South Lake Tahoe, CA. Instead of marinara sauce, this pizza is lathered with Thai peanut sauce made from scratch using peanut butter, soy sauce, fresh ginger, garlic and brown sugar. Then it’s topped with chicken and mozzarella cheese and baked in the oven. After it’s done baking, this Thai pizza is topped with fresh ingredients, including cilantro, carrots, sprouts, and lime. What other […]

Cold Sesame Noodles

Here I offer two improvements over the basic, for a truly momentously delicious dish that largely comes together with pantry staples. The first improvement is an oldie, but a goodie if you’ve been following my posts: sautéed salt-soaked tofu. And the second improvement is a real mind-bender, from Serious Eats: you […]

Peanut Sauce

Please, don’t be fooled by the appearance of this sauce. Because I will admit it does not look very appetizing, because it’s, well, brown. But trust, trust in the power of the peanut. Because hooooly daaang. It’s good. Pour it all over your veggies or rice or meat on a stick or whatever. Just find a way to eat it. Peanut Sauce Ingredients 1/2 cup peanut butter  2 tsp sugar 1 tbsp soy sauce sriracha to taste Instructions Blend and […]

Thai Peanut Sauce from your Pantry!

Whenever I go get Thai food, one of my favorite things to smother all my food in is peanut sauce. I’m always attracted to dishes on the Thai menu when they involve peanut sauce, because I felt like it’s something I couldn’t recreate at home. BUT now I can! And you can, too, with a few simple ingredients from you pantry. I got the recipe from Sprouted Kitchen, which always has a nice variety of recipes to try. Thai Peanut […]
